Why is water a natural temperature regulator for living things?

One of the many functions of water, especially in living things, is to act as a temperature regulator that keeps organisms from becoming too warm or too cold. Explain what PROPERTY of water enables it to effectively regulate and organism’s temperature.
It would be best if someone could help me on this question by december 5, 2007.

If you are in first year bio, then you are referring to this property of water: Water resists temperature change.

This property makes lakes and other bodies of water have a more even temperature than the surrounding air. The water cools off more slowly in the evening and it warms up more slowly during the day. So the organisms living in the water have a more stable environment.
